This casserole is as easy as it is delicious! Served with sliced fruit, it's perfect for a fancy brunch, a cozy breakfast for two, or a kid-friendly family dinner.
4 Slices White Bread
1 Pound ASC Tuscan Sausage
1 Teaspoon Mustard
1/4 Cup Green Onions
1 Cup Shredded Swiss Cheese
4 Eggs, Beaten
1 Pint Half & Half
1/4-1/2 Teaspoon Salt
1/8 Teaspoon Pepper
A Dash of Nutmeg
Line the bottom of an 8" square baking dish with white bread. Brown and drain the sausage, and stir in the mustard, mixing well. Spoon the sausage mixture evenly over the bread. Sprinkle the finely chopped green onions over the sausage, then add the shredded Swiss cheese.
In a separate mixing bowl, add the eggs, and beat lightly. Add the remaining ingredients and mix well. Pour evenly over the sausage, green onions, and shredded Swiss cheese.
Bake in a 350º oven for 45 minutes until golden brown, or until the knife comes out clean. (**Depending on your oven, casserole may brown too quickly on top. If so, once casserole reaches desired golden brown on top, cover lightly with foil and resume cooking.)
**This delicious breakfast casserole tastes best if you make it with sausage that is not seasoned with sage. The Atlanta Sausage Company recommends it's Tuscan and Polish mild sausage varieties. You can also add a little heat by substituting a spicy sausage, or for a healthy alternative, add turkey sausage and mushrooms, and top with tomatoes.
